My Idiot-Proof Chocolate Cake

We all have a go to recipe, one that never lets us down and this chocolate cake recipe does just that.

I've been making it for years and have fiddled with it to get it just right. I have no idea of the original author/baker of this recipe as it was passed on to me by a previous colleague but all I can tell you is this - it will not disappoint! It's what first got me in to baking and since then I have passed it on to so many people wanting a reliable chocolate cake recipe.

It also uses measuring cups so there is no weighing involved. Chuck it all in one bowl, whisk and bake - easy! Another plus is the milk can be subbed for an alternative. Mr T is lactose intolerant so often I used Lacofree milk in it and the results are exactly the same.

My Idiot-Proof Chocolate Cake
2.5 cups SR Flour
2 cups soft dark brown sugar (although any sugar will be fine)
1 cup cocoa
1 cup veg/sunflower oil
1.5 cups of milk
1tsp baking powder
1/2 tsp vanilla extract
3 eggs

Preheat your oven to 160C (fan)
Grease and line two 20cm cake tins
Pop all the ingredients in a bowl and whisk until smooth
Divide between the two tins and bake for 40mins or until a skewer inserted comes out clean
Tip onto a wire rack to cool

You can fill it with buttercream or gananche, leave it bare or cover it in fondant; it's entirely up to you. You can adjust the size of the tins too, just tailor the times to suit. Below are a selection of cakes I have made using this recipe, I hope you all love it as much as I do.
